Mozarella Chicken

  • 4 whole boneless chicken breasts
  • 4 eggs
  • Italian breadcrumbs (or your choice)
  • 3/4 pounds of margarine (or butter)
  • 1/2 pound of fresh mushrooms
  • 1/2 pound of mozzarella cheese

Cut up the chicken breasts into pieces which can be served. Place the chicken in slightly beaten egg for one hour. Refrigerate. Saute the mushrooms and set them aside. Roll the chicken pieces in the breadcrumbs and fry them in margarine until they turn brown.

Place the chicken in a 9 x 13 dish and place the mushrooms on top. Heat the oven to 325 degrees and bake for 12 minutes. Add cheese on top and put chicken back in the oven until the cheese melts.
