- 1/2 stick of butter or margarine
- 3 chopped green onions
- 3 chopped stalks of celery with leaves
- 2 grated carrots
- 2 cans of chicken broth
- 2 cans of cheese soup
- 1 can of cream of potato soup
- Parsley flakes
- Tabasco sauce to taste
- Salt & pepper to taste
- 8oz of sour cream or yogurt
- 3 tbsp. of cooking sherry
Melt the butter over a low heat and saute the carrots, onions, and celery. Add the chicken broth, cover and let simmer for 30 minutes. Add other soups, parsely, salt & pepper, and tabasco sauce. Stir that in sour cream and let it simmer for 15 minutes. Add the sherry and stir a little more before serving.
