Crockpot Cheese Soup

  • 1/2 stick of butter or margarine
  • 3 chopped green onions
  • 3 chopped stalks of celery with leaves
  • 2 grated carrots
  • 2 cans of chicken broth
  • 2 cans of cheese soup
  • 1 can of cream of potato soup
  • Parsley flakes
  • Tabasco sauce to taste
  • Salt & pepper to taste
  • 8oz of sour cream or yogurt
  • 3 tbsp. of cooking sherry

Melt the butter over a low heat and saute the carrots, onions, and celery. Add the chicken broth, cover and let simmer for 30 minutes. Add other soups, parsely, salt & pepper, and tabasco sauce. Stir that in sour cream and let it simmer for 15 minutes. Add the sherry and stir a little more before serving.
