Corn Bread Mix

  • 1 cup of yellow corn meal
  • 1 cup of flour
  • 1/4 cup of sugar
  • 4 tsp. of baking powder
  • 1/2 tsp. of salt

Pour the mix into a bowl and add one egg, one cup of milk and four tbsp of softened shortening. Next, beat until smooth. Pour the batter into a 8 x 8 x 2 baking pan that is greased well. Bake this at 425 degress for 25 minutes. You can also use the old knife trick (knife is clean when pulling it out of mixture). Fill some greased muffin cups with 2/3 of batter. Bake those at 425 degrees for 20 minutes.
